Abril Callender

Executive Chef
With over a decade of culinary experience at Four Seasons, Chef Abril Callender brings both creative vision and operational excellence to her role as executive chef at Four Seasons Hotel Austin. Chef Callender has built a reputation for leading the Hotel’s most high-profile and large-scale events, all while leading the kitchen team with passion, creativity and warmth. Her tenure has seen the introduction of imaginative offerings such as Ciclo’s iconic Tomahawk Experience, along with a renewed emphasis on dietary innovation and responsibly sourced ingredients. Known for her vibrant Latin-inspired fare and inventive vegan dishes, she leads with a commitment to innovation, sustainability and delivering unforgettable dining experiences.

Amanda Pallagi

Executive Pastry Chef
Growing up cooking alongside her grandma in rural Texas, Amanda’s natural craftiness and prowess in the kitchen turned into a full-fledged business in high school. Despite this early success and subsequent roles in restaurants, Amanda didn’t consider culinary school seriously until 2008 when she joined Four Seasons Hotel Austin as a hostess in the restaurant. Drawn inexorably to the pastry shop, she was taken under the wing of the executive pastry chef who motivated her to seek out professional training. Over the next five years, Amanda took on increasing levels of responsibility before her promotion to the top pastry position in late 2015.

Juan Mateo

Ciclo Restaurant Chef
Ciclo Chef Juan Mateo was born in Mayagüez, Puerto Rico, where his earliest lessons in food came from time spent in his grandmother’s kitchen. Though cooking was not his original calling, a plantain soup she prepared with three textures left a lasting impression—teaching him balance, patience, and the power of using food to hold a memory in time. After becoming a father, Juan entered professional kitchens, quickly discovering his vocation and rising into leadership roles. His journey has taken him from Puerto Rico to Orlando and beyond, including opening one of the city’s first Puerto Rican restaurants and earning national recognition. Juan's cooking blends modern techniques with deeply rooted tradition all driven by warmth, emotion, and a belief that food is the ultimate connector.

Restaurateur
Chef Richard Sandoval is a global pioneer in contemporary Latin cuisine. His career as a chef, restaurateur and entrepreneur also include serving as a television personality, cookbook author, brand ambassador and philanthropist. He is internationally acclaimed for his innovative approach in combining Latin ingredients with modern culinary techniques to create award-winning flavours that span 60 locations and 4 continents.
