Senior Executive Pastry Chef
A prominent figure in the global pastry scene, Chef Nicolas Lambert is a French pastry artist with a distinguishable style, utilising a hero ingredient and complementing its flavours within a maximum of four textures. During his seven-year career with Four Seasons so far, Nicolas has received various honours for his culinary art, including the 2021 Hotel and Catering Pastry Chef Excellence Award by Relais Desserts International and being named the 2022 Pastry Chef of the Year by Gault & Millau UAE.

    Echoes from rugged French Riviera cliffs and intricate Middle Eastern lanterns blend in this limited edition Easter egg by Senior Executive Pastry Chef Nicolas Lambert and Chef Pierre-Jean Quinonero, illuminated from within to symbolize guidance, tradition and a timeless connection between two shores. Priced at AED 280; available from April 18 to 21 for takeaway only. Orders should be placed 24 hours in advance for pick-up at Shai Salon. Pick-up times from 10:00 am to 12:00 midnight.
