Senior Executive Pastry Chef
A prominent figure in the global pastry scene, Chef Nicolas Lambert is a French pastry artist with a distinguishable style, utilising a hero ingredient and complementing its flavours within a maximum of four textures. During his seven-year career with Four Seasons so far, Nicolas has received various honours for his culinary art, including the 2021 Hotel and Catering Pastry Chef Excellence Award by Relais Desserts International and being named the 2022 Pastry Chef of the Year by Gault & Millau UAE.

    Shai Salon is delighted to debut The Flower of Love, a dessert that beautifully captures the essence of Valentine's Day. This exquisite treat features a creamy Korean strawberry mousse, delicately layered with vibrant lychee marmalade. Soft rose and strawberry financiers add a refined texture, while a sprinkle of strawberry crumble soil offers a satisfying crunch. The Flower of Love can also be enjoyed at Sea Fu, Mercury Rooftop and Hendricks on Valentine’s Day, or taken home for a sweet-at-home celebration. AED 90 for take away; AED 120 for dine-in (with rose ice cream).

    ZUMURUDA: A JEWEL OF FLAVOUR

    Savour Zumuruda, an exquisite creation inspired by the emerald and crafted by Senior Executive Pastry Chef Nicolas Lambert in tribute to Ibn al-Baitar, the Andalusian botanist. A blend of pistachio cream, chocolate stick, caramelized cocoa nibs and pistachio tuile, Zumuruda perfectly fuses heritage and innovation, bringing people together to reflect and enjoy tradition with every indulgent bite. AED 300, serves four people. Orders must be placed 48 hours in advance.
