Chef de Cuisine Thomas Remy marries French culinary finesse and the soul of Vietnam on a plate. Hailing from Paris, Chef Remy’s unwavering love for food, exploration and the ocean has guided him on an incredible culinary journey. From New Zealand and Australia to French Polynesia, Geneva and Megeve, he has honed his culinary skills and even earned his diving instructor certification. Chef Remy’s dedication to his craft continues to inspire others in the field here on the coast of central Vietnam.
