Indulge in an authentic omakase experience at Sushi Ginza Onodera, our renowned sushi restaurant at Four Seasons Hotel Kyoto. Our chefs craft Edomae sushi using premium ingredients from local markets, Tokyo’s Toyosu Market and Hokkaido. Highlighting the city’s rich culture, this experience includes a sushi counter made from 400-year-old Japanese cypress and tableware that blends regional influences, including Bizen ware from Okayama and Kiyomizu ware. Savour your meal as you gaze out at our Shakusui-en pond garden.

Reservations and cancellation policy
Reservations are required for outside guests. 7 days’ notice is required for cancellation, or the full price will be charged.
Minimum age requirement
Children ages 8 and above are welcome at the counter with an adult. Parties with children under age 8 are required to book the private dining room. Sushi Ginza Onodera offers no children’s menus.
Seating capacity
There is a maximum of 10 guests at the counter, and four to six for a private room.

Meet the team

Executive Chef Takuya Kubo at Sushi Ginza Onodera, Four Seasons Hotel Kyoto, renowned for his expertise in Edomae sushi.

Executive Chef
Executive Chef Takuya Kubo, who grew up in Aomori Prefecture famous for its Ohma tuna, was exposed to fresh seasonal ingredients from the Tsugaru Strait, the Japan Sea and the Pacific Ocean from a young age. In 2018, he joined Sushi Ginza Onodera, expanding his career to the group’s international locations. As the head chef at Sushi Ginza Onodera in New York, he helped the restaurant maintain its Michelin Guide New York City star for five consecutive years. He later returned to Tokyo’s main branch and has now taken on the role of Executive Chef at Four Seasons Hotel Kyoto.

    Choose from two omakase courses crafted by our head chef: five or eight appetizers, eight or 10 pieces of nigiri, seasonal mini rice bowl, red miso soup, Edomae-style tamagoyaki and dessert. Both options include our signature maguro and fresh seafood sourced from Hokkaido and other regions. Omakase: JPY 37,500; premium omakase: JPY 49,500.
