- Reservations are required for outside guests. 7 days’ notice is required for cancellation, or the full price will be charged.
- Minimum age requirement
- Children ages 8 and above are welcome at the counter with an adult. Parties with children under age 8 are required to book the private dining room. Sushi Ginza Onodera offers no children’s menus.
- Seating capacity
- There is a maximum of 10 guests at the counter, and four to six for a private room.

Rooted in the traditions of Edomae sushi, our omakase experience reflects the essence of Japanese hospitality. Meaning “I leave it up to you,” omakase places each course in the hands of the chef, showcasing seasonal ingredients and expertly prepared nigiri at Sushi Ginza Onodera at Four Seasons Hotel Kyoto.

Each omakase course follows a seasonal progression shaped by the day’s catch and the chef’s selection. Depending on the menu, guests can expect a sequence of seasonal appetisers followed by 7 to 10 pieces of nigiri, before concluding with miso soup, tamagoyaki and dessert. The ingredients, pacing and composition change regularly throughout the year according to seasonal availability.
Sushi Ginza Onodera follows the traditions of Edomae sushi, where fish is carefully aged, cured or marinated to deepen its umami and bring out its natural character. Each piece is served at the precise moment the temperature of the fish and the signature red-vinegar rice are in balance, creating a highly technical omakase experience rarely found in Kyoto.
The omakase experience typically lasts between 90 minutes and 2.5 hours, depending on the course and pace of service. As each piece of sushi is prepared and served individually, the meal unfolds gradually, allowing guests to appreciate the natural progression and rhythm of each seasonal course.
Yes, Sushi Ginza Onodera can accommodate certain dietary requirements and food allergies with advance notice. As each omakase course is shaped by seasonal ingredients and traditional Edomae techniques, some substitutions may be limited, and requests involving a wide range of ingredient exclusions may not be possible. We recommend informing our team when booking so we can advise on the best possible experience.
