Bringing the bold flavours of her Hong Kong homeland to the Maldives, acclaimed Chef Grace Choy takes up residence at Four Seasons Resort Maldives at Kuda Huraa, transforming the island’s ocean bounty into Cantonese creations. Guided by her belief that “you can take culinary inspiration from any little thing in the world,” she infuses every dish with the creativity that earned her first restaurant a coveted spot on “CNN Hong Kong’s” 10 Best Private Kitchens.

At our Resort, experience the same intimate, interactive dining Chef Choy offers at her four-seat Tokyo restaurant, ChoyChoy Private Kitchen – only this time, under the stars at Pool Island. In this open-air sanctuary, every bite tells a story of time-honoured craftsmanship and refined technique.

The menu features Cantonese classics elevated with her signature flair and crafted with locally sourced ingredients. Indulge in Hong Kong–style char siu; double-boiled dried cabbage and fig soup; and your choice of traditional steamed grouper, spicy tiger prawns with vermicelli or pan-fried lotus root cake. Finish with a delicate taro paste and seasonal fruit, paired with a 1998 Ripe Pu’er Lao Cha Tou (old tea).

Beyond the table, immerse yourself in Chef Choy’s culinary world through hands-on cooking classes and a traditional Maldivian fishing experience, with the chance to cook your own catch. Both experiences are available twice a week on a first-come, first-served basis.

Chef Choy will be in residence five days a week from April 1 to 15, 2025, offering dinner for up to eight tables per night on a first-come, first-served basis.
