    Chef Ryo’s multi-course menu celebrates love through artfully presented dishes that showcase the finest local and Italian ingredients. Each course is paired with carefully selected wines to elevate the experience, culminating in a decadent dessert that is almost too beautiful to eat. Menu highlights include Whipped Ricotta Tart with truffle honey and marcona almond; Ahi Tataki with arugula pesto, cherry tomato, kalamata olive, ricotta salata and yuzu oil; Gnocchi with parmesan cream, wild mushroom and black truffle; and Surf & Turf with beef fillet and lobster tail, asparagus, mini zucchini, frisee, dried tomato dressing and red wine demi-glace. Chef Ryo Takatsuka

Ryo Takatsuka

Chef de Cuisine, Noe
Chef Takatsuka has been drawn to the kitchen ever since he was a young boy growing up in Toyama, a coastal city along the Sea of Japan. His passion for Italian cuisine propelled a bold move to Tuscany and straight into the kitchens of Pistoia and Siena. During his 10 years in Italy, he worked with Chef Giancarlo Perbellini in Verona, helping his restaurant to earn two Michelin stars before Chef Takatsuka moved to Tokyo in 2008 as Head Chef for the highly acclaimed Ristorante Yamazaki. In 2016, he arrived here at Noe, where his creative vision comes to life in the most unexpected ways.
