Headlined by industry legends Chef Massimo Bottura, known for his artistic reinterpretation of Italian cuisine, and Chef Virgilio Martínez, celebrated for his groundbreaking exploration of Peruvian biodiversity, this event merges their creative genius. The two chefs will be joined by Chef Marco Calenzo of our very own Lido Restaurant and Head Chef Bernardo Paladini of Torno Subito Miami.

  • Osteria Francescana, Italy | Best Restaurant in The World 2016 & 2018 by The World’s 50 Best Restaurants

    Massimo Bottura

    Massimo Bottura, one of the most influential figures in gastronomy, opened Osteria Francescana in 1995, earning three Michelin stars. His global success also includes Torno Subito in Dubai and Miami, as well as Gucci Osteria in Beverly Hills, Tokyo and Seoul. Chef Bottura also co-founded Food for Soul, a non-profit tackling food waste and social isolation. He was named Goodwill Ambassador for the United Nations Environment Program, while Osteria Francescana received a Michelin Green Star for sustainability.

    Virgilio Martínez

    Virgilio Martínez is a celebrated Peruvian chef renowned for showcasing Peru’s biodiversity and culinary heritage. He is the founder of Central in Lima, MIL in Cusco, and the creator of Mater, an organization that connects gastronomy, culture and nature. After working in kitchens around the world, Chef Martinez returned to Peru in 2008 to open Central, a restaurant that highlights the country’s diverse landscapes.

    Marco Calenzo, the Florentine chef who joined our Hotel in 2023, has quickly established himself as a leading figure in Miami’s culinary scene. His innovative approach to Italian cuisine earned Lido Restaurant its three forks honour from Gambero Rosso, merging the charm of Italy’s coastal regions with the relaxed elegance of Miami’s oceanfront. Growing up in Florence, Chef Calenzo’s passion for Italian cuisine was ignited early before his career took him to Michelin-starred restaurants across China, England, Japan and Hawaii.

    BERNARDO PALADINI

    Chef Bernardo Paladini forged a name for himself as an esteemed chef in the industry. For 12 years, he honed his skills under the guidance of Chef Massimo Bottura at Osteria Francescana. Prior, he spent three years at the Michelin-starred Acquolina in Rome. His dedication and talent led to a role in the opening of Gucci Osteria in Florence and Franceschetta58, the sister restaurant of Osteria Francescana. In 2019, Paladini took charge of Chef Bottura’s Michelin-starred restaurant Torno Subito in Dubai.
